help tempering chocolate?
hi there i need some advice, would it be ok to use a greased glass top instead of a marble top to temper my chocolate?
The main idea is that the surface should have enough mass to regulate the temperature of the chocolate.
The absolute best would be those marble surfaces with water pipes under them so you could pass warm or cool water.
